HALF-BOTTLES

The market for small-format bottles is modest, but we do have a nice array of 375ml bottles.
"Splits", by the way, are not "half bottles."  A "split" is actually a quarter-bottle containing 187ml of liquid.

A few years ago, trying to increase the market, a handful of wineries offering half-liter bottles, thinking restaurants would embrace these.  They didn't.

A restaurateur told me small-format bottles often caused more trouble than they were worth.  "A party of eight arrives and the host ordered a single half-bottle of Macon-Villages.  I said to him this was about one-and-a-half ounces per person.   He said that's all they wanted, so we made a $15 sale and had to wash $40-worth of glassware!"

A prestigious Sonoma winery offered 500ml bottles.  The sales manager was looking for a new job within a year of their having bottled a significant quantity of Cabernet Sauvignon in half-liters which didn't sell.

In any case, sometimes there's but one or two dining and a half bottle makes sense.

It's said that half-bottles age faster than full bottles.  If dinner is tonight, then you don't have a problem.
